Have you been busting your butt to get in shape for the last few weeks (or more) only to be hit with insane sugar cravings?! I know that's happened to me (and has been an issue for me this past week).
If this sounds familiar, or you would like to have a healthy version of a "sinful" snack in your back pocket, here's a healthy take on chocolate chip cookie dough for you to keep those cravings at bay.
Vegan Chickpea Cookie Dough
Ingredients:
1 cup chickpeas, skins removed, patted dry
1/3 cup natural peanut butter
1 1/2 teaspoons vanilla extract
2 tablespoons agave nectar
1/3 cup vegan chocolate chips
1/3 cup natural peanut butter
1 1/2 teaspoons vanilla extract
2 tablespoons agave nectar
1/3 cup vegan chocolate chips
Directions:
- Combine chickpeas, peanut butter, vanilla extract, and agave in a blender or food processor. Blend until it's a fine puree.
- Remove cookie dough mixture from blender, and place in a large bowl. Add vegan chocolate chips, and mix well with a wooden spoon.
This recipes serves 6, and is a wonderful way to get your sugar fix while still staying on track with your health and fitness goals. Enjoy!
