No Bake Chocolate-Peanut Butter Protein Poppers

For all of you chocolate & peanut butter lovers out there, I have a delicious treat for you; Chocolate-Peanut Butter Protein Poppers. Not only are these easy to make, they're also super delicious and vegan friendly! Not to mention, they taste like they'd be bad for you, but they're only 52 calories per serving (1 ball).

Recipe:

Ingredients:
2 cups natural peanut butter, crunchy
1/2 cup agave nectar
2 scoops MHP Probolic-SR Protein, vanilla flavor
Sea salt, to taste
Water, as needed.
2 cups vegan sugar free dark chocolate
1 tsp vanilla extract

Directions:


1. Mix peanut butter, agave nectar, protein powder, sea salt and water in a large bowl.

2. Roll mixture into balls (approx.1 tablespoon per ball) and place in a dish, then refrigerate for 30-45 minutes.

3. In a small pot, melt the chocolate over medium-low heat, stirring often, until smooth. Stir in 1 teaspoon of vanilla extract.

4. Line a baking sheet with wax paper. Remove balls from refrigerator.

5. Dip into melted chocolate and arrange on baking sheet.

6. Let set for 30-45 minutes, then place in the refrigerator for another 30-45 minutes before serving.

Nutrition Facts (per ball): 52 calories, 1.2g protein, 5.3g carbs, 4.3g fat


This is the perfect treat when you are craving something sweet but don't want to spoil all of your hard work at the gym for the week!

Apple & Brie Bites

If you're having people over this weekend but don't know what to make for an appetizer, here's a recipe that's sure to be a crowd pleaser - Apple & Brie Bites.

These crescents filled with gooey brie cheese, apples & honeyed pecans make a deliciously sweet & savoury appetizer that is both simple and easy to make in a pinch.

Recipe:
Ingredients:
 1 Peeled Apple (easier to eat then with the peel - as pictured)
1 can of Pillsbury Crescent Rolls (Makes 8 Crescents)
16 Whole Pecans
Honey to drizzle

Directions:
Preheat oven to 375 F
Get your crescents ready on a baking sheet. 
Slice a peeled apple into one inch slices.
Layer the dough with Brie, apple, pecans, and a drizzle of honey.
Roll them up and bake for 10-12 minutes.
Let cool for 5 minutes. Serve & Enjoy!

Jalapeno Popper Dip

I don't know about you, but I am a huge fan of jalapeno poppers (or most things involving jalapenos).
So whenever I am in charge of appetizers, jalapeno poppers are a must have item, but dips are also very popular with guests (especially hot dips). So wouldn't it be great to combine these two things?

If you are with me on that, then here is a great dip recipe; Jalapeno Popper Dip.



Recipe:

Ingredients:
6-8 slices of bacon, diced and cooked crispy
2 8-oz packages of cream cheese, softened
1 cup of mayonnaise
4-6 jalapeno's, chopped and deseeded. The seeds will make it fiery hot (I like to leave some seeds in)
1 cup of cheddar cheese, shredded
1/2 cup of mozzarella cheese, shredded
1/4 cup diced green onion

Topping:
1 cup of crushed crackers (Ritz works great, or for a healthier cracker I use Breton)
1/2 cup parmesan cheese
1/2 stick of butter, melted

Directions:
Preheat oven to 350.
Combine all of the ingredients into a medium bowl. Stir well.
Transfer to an oven proof dish. Combine the topping ingredients and sprinkle all over the top of the dip.
Bake the dip for 20-30 minutes or until bubbly. 
Remove from oven. Serve & Enjoy!

Super Easy Antijitos

It's New Years Eve, and with that comes the get togethers and parties, all of which will have some form of food as well as tasty beverages. If you are hosting a party this year and are stumped on what to make for a quick and easy appetizer, look no further.

This is my go to appetizer that is not only quick and really easy to make (including prep time it only takes approximately 15-20 minutes), but it's also pretty cheap as well (I spent roughly $10).

Super Easy Antijitos


Recipe:

Ingredients:
1-250g brick of plain cream cheese at room temperature
1/2 cup shredded  marble cheddar cheese
1/3 cup hot salsa
4-6 large white (or whole wheat flour tortillas)

Directions:
Preheat oven to 350 degrees F.

In a medium sized bowl, mix together the first 3 ingredients until well blended (I use a metal spoon, but you could use a hand mixer if you wish to speed things up a bit).

Using a spreading knife (or a spatula) spread a layer of the cream cheese mixture onto a flour tortilla, spreading it all the way to its edges (do this for each tortilla until the mixture is used up).

Fold in sides and top of tortilla approximately 1/2 inch inward. Now roll the top folded portion down tightly until you have essentially made a tortilla roll up.

Now cut the rolled tortilla into equal pinwheel sections and place on an aluminum foil lined baking tray.

Place tray in oven and bake for 8-10 minutes. Serve immediately with salsa and sour cream for dipping & enjoy!
